Thai green curry paste

Green Curry Paste

Use this paste with coconut milk and vegetables or meat of your choice to make a tasty Thai green curry.

What you will need

  • 6 green birds eye chillies
  • 3 lemon grass sticks - touch leaves discarded
  • 4 cloves garlic
  • 1 1/2 tbsp galangal paste
  • 2cm ginger
  • 1 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 tsp lime zest
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric
  • 2 tbsp vegetable oil
  • 2 tbsp water

Method

  1. Blend all ingredients together in a food processor to make a very nice smooth paste.
  2. Add more water or oil if necessary, to make the paste as smooth as possible.
