The Magnificent Marigold
A display of vivid yellow marigolds is an impressive sight. These beautiful flowers will impart a gorgeous golden colour and a peppery, citrusy taste to your cooking.
- To prepare for cooking, pick the flowers late in the morning, once the blooms have opened. They will close at night and when it rains.
- Use fresh blossoms that have been harvested in the last two days and make sure they have not been damaged. Snip at the stem close to the blossom, carefully remove the stem before using in cooking.
- Wash the flower petals thoroughly and remove each petal from the flower head to sprinkle over a salad, boiled eggs or place the flower whole to garnish a curry, or decorate a cake.
