Coriander Chutney

What you will need
- 1 bunch fresh coriander
- 4 green curry chillies
- 6 garlic cloves
- 1 tsp ginger
- 1 onion, sliced
- 1 tbsp unsalted cashew nuts
- 1 tsp lemon juice
- 1/2 tsp salt
- water
Method
- Add the coriander, green chillis, ginger, garlic, cashew nuts and a small bit of water to a food processor. Blitz to make a smooth paste, add a little more water if necessary.
- Add the salt and lemon juice and blitz again for up to 20 seconds.
- Check the seasoning and add more salt or lemon if required. Add a little bit more water and blitz again if its too dry.
- The chutney can be stored in a container in the fridge for up to 6 days.
