Coriander Chutney

What you will need

  • 1 bunch fresh coriander
  • 4 green curry chillies
  • 6 garlic cloves
  • 1 tsp ginger
  • 1 onion, sliced
  • 1 tbsp unsalted cashew nuts
  • 1 tsp lemon juice
  • 1/2 tsp salt
  • water

Method

  1. Add the coriander, green chillis, ginger, garlic, cashew nuts and a small bit of water to a food processor. Blitz to make a smooth paste, add a little more water if necessary.
  2. Add the salt and lemon juice and blitz again for up to 20 seconds.
  3. Check the seasoning and add more salt or lemon if required. Add a little bit more water and blitz again if its too dry.
  4. The chutney can be stored in a container in the fridge for up to 6 days.
